Whenever you need comfort food, you can’t go wrong with a cup of cocoa and my Oatmeal Maple Walnut cookies. Note: This is comfort food, not health food. Besides, the oatmeal and the butter cancel each other out.

1 and ½ sticks of butter
1 cup light brown sugar
½ cup granulated sugar
2 Tablespoons real maple syrup
2 Teaspoons vanilla extract
1 egg
½ teaspoon baking soda
1 teaspoon ground cinnamon
¼ teaspoon salt
2/3 cup unbleached white flour
3 cups old fashioned or quick cook oatmeal
1 ½ cups chopped walnuts

Mix butter, sugars, maple syrup, vanilla and egg in a food processor until blended and light in color. Add baking soda, cinnamon, and salt and blend again. Pour this into a mixing bowl and add the flour, oatmeal, and nuts. Mix until well blended.

Place balls of about 2 tablespoons of dough onto a greased or parchment covered cookie sheet. These cookies spread but as a result they are soft and chewy not crispy. Bake at 350 until they look almost done – the centers of the cookies might still look a bit light in color and shiny – remove them from the oven anyway if you like a soft cookie.
